 Rosemary Citrus Glaze for Roasted Chicken

Ingredients 

  • 2 tbsp Rosemary Citrus Jelly
     

  • 1 tbsp olive oil
     

  • 1 tsp Dijon mustard
     

  • 1 tbsp lemon juice
     

  • Salt + pepper

Instructions

  • Whisk together. Brush over chicken during the last 15 minutes of roasting. Let caramelize slightly.

  • This gives you that sweet-savory herbal depth without overpowering the meat.

Also works beautifully on pork tenderloin or lamb

Lemon Citrus Loaf

Ingredients 

Loaf

  • 1 ½ cups all-purpose flour
     

  • 1 tsp baking powder
     

  • ½ tsp baking soda
     

  • ¼ tsp salt
     

  • ½ cup unsalted butter, softened
     

  • ¾ cup sugar
     

  • 2 eggs
     

  • Zest of 1 lemon
     

  • Zest of ½ orange
     

  • 2 tbsp fresh lemon juice
     

  • ½ cup plain Greek yogurt (or sour cream)
     

  • 1 tbsp finely minced fresh rosemary (very fine — almost dust-like)
     

Instructions

  1. Preheat the oven to 350°F (175°C).Grease or line a standard loaf pan.

  2. In a bowl, whisk flour, baking powder, baking soda, and salt.

  3.  In another bowl: Cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add citrus zest, lemon juice, and rosemary. Stir in yogurt

  4. Fold dry ingredients into wet just until combined.     Do not overmix.

  5. Pour into a loaf pan. Bake for 45–55 minutes until golden and a toothpick comes out clean.

Cool 10–15 minutes before removing from the pan.

Warm 3 tbsp jelly, slightly.

Let set before slicing.

Light Jelly Glaze (More Rustic)

Warm 3 tbsp of jelly gently until loose.
Whisk in 1–2 tbsp lemon juice.
Brush over warm loaf.

Ingredients 

  • 1 tbsp Rosemary Citrus Jelly
     

  • Juice of ½ lemon or orange
     

  • Sparkling water
     

  • Ice
