honey-like jelly brings a touch of meadow sweetness to everyday meals.


Sweet Dandelion "Honey" Butter

For an added speck of colour, you can sprinkle the yellow dandelion petals into the mixture.

Dandelion Jelly & Lime Cooler
Who knew a backyard weed and a little imagination could be so refreshing?
Ingredients

Dandelion Jelly: 2–3 tablespoons (subbing for 1–2 oz of syrup).

Fresh Lime Juice: 1 oz (roughly half a large lime).

Warm Water or Tea: 1–2 oz (to help dissolve the jelly).

Sparkling Water or Club Soda: 4–6 oz.

Ice: For serving.

Dissolve the Jelly: In a small glass or cocktail shaker, with the warm water or a small amount of warm dandelion tea. Whisk or stir vigorously until the jelly is fully "melted" and smooth.

Add Citrus: Stir in the fresh lime juice. The acidity of the lime pairs perfectly with the honey-like floral notes of the jelly.

Chill: Fill a tall glass with ice and pour your dandelion-lime base over it.

Top with Fizz: Fill the rest of the glass with sparkling water and give it a gentle stir to combine without losing the carbonation.
Garnish with a lime wheel and serve cold.
Adult Variation: For a cocktail version, you can dissolve the jelly directly into 2 oz of gin or vodka instead of warm water.
