Blackberry Balsamic Glazed Chicken

4 chicken thighs or breasts

Salt & pepper

½ cup blackberry jam

2 tbsp balsamic vinegar

1 tsp Dijon mustard

1 clove garlic, minced

1 tsp fresh thyme (optional)
Instructions

Season chicken with salt & pepper.

Sear in a skillet until golden and nearly cooked through.

In a small bowl, whisk jam, balsamic, Dijon, garlic, and thyme.

Pour glaze over chicken and simmer for 5–7 minutes until sticky and glossy.

Spoon extra sauce over before serving.

Instructions

1–2 tsp honey or maple syrup (optional, to taste)

¾ cup cold water or sparkling water

1 cup ice
A few fresh mint leaves (optional)

Add jam, lemon juice, sweetener (if using), water, and ice to a blender.

Blend until thick and slushy.

Taste and adjust sweetness or lemon.

Pour into a glass and garnish with mint or a fresh blackberry.
