BLACKBERRY JAM RECIPES

An old-fashioned  favourite - used in a modern way

Blackberry Balsamic Glazed Chicken

Ingredients 

  • 4 chicken thighs or breasts
     

  • Salt & pepper
     

  • ½ cup blackberry jam
     

  • 2 tbsp balsamic vinegar
     

  • 1 tsp Dijon mustard
     

  • 1 clove garlic, minced
     

  • 1 tsp fresh thyme (optional)

Instructions

  • Season chicken with salt & pepper.
     

  • Sear in a skillet until golden and nearly cooked through.
     

  • In a small bowl, whisk jam, balsamic, Dijon, garlic, and thyme.
     

  • Pour glaze over chicken and simmer for 5–7 minutes until sticky and glossy.
     

  • Spoon extra sauce over before serving.
     

Beautiful with roasted potatoes or fresh greens.

Blackberry & Goat Cheese Crostini

Perfect for entertaining — and so simple

Ingredients 

  • Baguette slices, toasted
     

  • Soft goat cheese
     

  • Blackberry jam
     

  • Fresh thyme or cracked pepper
     

Optional: drizzle of honey

Instructions

  • Spread goat cheese on warm toasted bread.
     

  • Spoon a small dollop of blackberry jam on top.
     

  • Finish with thyme or pepper.

Blackberry Summer Slush

Fruity, lightly tart, and ridiculously refreshing.

Ingredients 

Instructions

  • 2 tbsp blackberry jam
     

  • 1 tbsp fresh lemon juice
     

  • 1–2 tsp honey or maple syrup (optional, to taste)
     

  • ¾ cup cold water or sparkling water
     

  • 1 cup ice
     

A few fresh mint leaves (optional)

  • Add jam, lemon juice, sweetener (if using), water, and ice to a blender.
     

  • Blend until thick and slushy.
     

  • Taste and adjust sweetness or lemon.
     

  • Pour into a glass and garnish with mint or a fresh blackberry.

 For a grown-up version: add a splash of gin or vodka.
For kids: use sparkling water for a fizzy berry treat.
